There's not much configuring you have to do anymore since Vulkan. You can basically just run "wine PathOfExile_x64.exe" and try it out.
The only thing that comes to mind right now is that if you have an AMD GPU you need to use the AMDVLK driver and not the Mesa one. PoE tries to load some renderer extension without checking if it exists and Wine crashes in the current stable Mesa driver. That's how I recall it at least, correct me if I'm wrong :D
FYI, POE run great with RADV + ACO with Mesa 20.2 RC3

The technical patch is out now, with a lot of changes. Let's hope it doesn't jinx up the wine setup! Anyone can test it out? I'm not able to play until late afternoon.
Edit: Yeah, I was so hyped for it I thought it was already out. Sorry :)

Thanks for the info, that's great to hear! RC4 is out now, and it looks like the 20.2 release will be just in time for Heist :)

AMDVLK seems to work just fine gladly.
@Tidalkraken Are you sure you are using the ACO compiler with the Vulkan renderer and not DX11?

Well, before the patch the game worked flawlessly and I was able to launch from Steam without issues, now it just crashes and I'm not exactly sure how to debug this cause I don't know what logs to look at. Can anyone point me in the right direction?

You need to start the game like this: PROTON_LOG=1 %command%
Then the log is going to be generated in the game directory with a steam-$GAMEID.log format.
Put the logs in a pastebin and link it here, maybe someone can figure it out.
Also, what renderer, what kind of GPU, which driver?

Downloaded the patch and ran a few maps. Everything seems to be fine for me on AMDVLK and the Vulkan renderer. Can't notice any change in performance so far, neither in a positive, nor in a negative way.
